We recently had the opportunity to observe and celebrate a significant achievement with our Chophouse event. This Chophouse initiative brought a premium, steakhouse-inspired dining experience to our hospital cafes.
The results were notable: an estimated $22,000 in sales and 1,500 portions sold, representing a remarkable 24% of our total daily sales. This outcome reflects the team's dedicated effort and the unique culinary experience they crafted.
The Chophouse Concept and Initial Observations
The Chophouse concept was introduced to offer a premium, steakhouse-inspired option within our hospital cafes, emphasizing fresh, locally sourced ingredients and expert preparation. The positive feedback on the food's quality indicated strong guest resonance. However, we also encountered a challenge related to pricing perceptions within a hospital setting.
Understanding Perceptions
As Amanda May-Smith, CNS President at HHS, noted, "I've seen the Chophouse experience in person, and it's one of those you have to see it to believe it. We don't have a pricing issue; we have a perception issue. Spot on. Experience and story drive the outcome."
This observation highlights the prevailing expectation that hospital cafes should prioritize affordability and functionality over a premium dining experience. The Chophouse event challenged this expectation. The core issue wasn't the price itself, which was competitive with external options, but how that price was perceived within the hospital environment.
Key Learnings: Storytelling and Context
This experience underscored the importance of effective communication to convey value. Simply providing quality food isn't enough; we must highlight the quality of ingredients, the expertise of our chefs, and the overall dining experience.
Appreciating Team Efforts
The success of the Chophouse event, resulting in significant sales and portion numbers, is a direct result of the dedication and creativity of our teams. Their efforts have provided valuable insights into how we can better communicate the value of our culinary offerings.
Reflecting on the Experience
This event reinforced that we are not just serving meals; we are creating experiences. By focusing on quality, storytelling, and context, we can help our guests appreciate the unique value we bring to hospital dining. We are committed to continuing to learn and refine our approach, ensuring that we provide exceptional dining experiences for everyone we serve.
