Southern Style Mustard Greens

Serves: 6 

Ingredients:
3 pounds fresh mustard greens, cleaned
2 tablespoons olive oil blend (use if not using pork jowl)
2 tablespoons vegetable base (use if not using pork jowl)
6-ounce pork jowl, diced (optional)
1 medium yellow onion, diced
¼ stick European-style unsalted butter, cubed
½ teaspoon sea salt
½ teaspoon ground black pepper
¼ teaspoon red pepper flakes
3 tablespoons cider vinegar
1 teaspoon brown sugar

Directions:
Heat a large heavy-bottomed pot over medium-high heat. 

Add pork jowl, stirring constantly (if not using pork jowl, use olive oil blend). Reduce heat to medium. Add the diced onion and sauté until caramelized. Add the cleaned mustard greens and red pepper flakes. Let simmer until tender, stirring occasionally. If not using pork jowl, add in the vegetable base.

Add the cubed butter and vinegar. Gently stir to combine. Add salt and pepper to taste. Use a slotted spoon to drain excess liquids.
